The insider's Silom rooftop: 21 floors up at the Mercure Surawong, rarely crowded, and home to mixologist Gongson Sonti's decade-plus experiment in drinking the Thai herb garden — galangal in the Negroni, moringa and lemongrass in the Siam Sour, a krachai foam where lesser bars would settle for citrus peel.
