Inside the new Andaz at One Bangkok, Piscari runs a clever two-act structure: Mediterranean aperitivo hour over Lumphini Park views until about half past six, then a nightly DJ tips it into "Supper Club mode". French chef Marc Vasseur's grilled seafood anchors the food, while the bar's Ruby Whisper — whisky and limoncello, which shouldn't work and absolutely does — headlines the list. The kicker: a hidden speakeasy behind a door inside the venue, styled like a seaside cave.
